CUA ĐỒNG RANG LÁ LỐT | Stir-fried rice-field crabs with lolot leaves

Stir-fried rice-field crabs with lolot leaves is a rustic and flavourful Vietnamese dish. The small freshwater crabs are cooked until slightly crisp, then combined with lolot leaves, which give the dish its distinctive aroma.

Served with a lightly seasoned dipping sauce, the dish is appreciated for the contrast between the crisp texture of the crabs and the delicate fragrance of the leaves.

Rice-field crabs are small freshwater crabs traditionally found in rice paddies, canals and wetland areas of the Vietnamese countryside. Common in everyday local cooking, they are used in many regional dishes.

Ingredients

Preparing the Rice-Field Crabs

Rinse the rice-field crabs thoroughly several times in clean water to remove any impurities, then leave them to drain.

Remove the top shell and discard the inedible parts. Carefully collect the meat and, if present, the roe or creamy part of the crab.

Place the prepared crabs in a bowl, then season with ½ teaspoon salt, ¼ teaspoon sugar and ¼ teaspoon monosodium glutamate. Mix gently and leave to marinate for about 10 minutes.

Soak the lolot leaves in lightly salted water for 3 to 5 minutes, then rinse and drain them. Finely slice the leaves and set aside.

Cooking the Rice-Field Crabs

Heat a little oil in a frying pan over medium heat. Add 1 teaspoon of chopped garlic and sauté until lightly golden and fragrant.

Add the marinated crabs and stir-fry for about 10 minutes, until they are fully cooked and slightly crisp.

Add 1 teaspoon of seasoning powder, ½ teaspoon of chilli powder and ½ teaspoon of sugar. Mix well so that the crabs are evenly coated.

Continue cooking over medium heat, stirring regularly, until the crabs become crisp without burning.

Add the finely sliced lolot leaves, toss quickly for a few moments, then remove the pan from the heat immediately.

Note: Lolot leaves cook very quickly. They only need to be stir-fried briefly to preserve their aroma and prevent them from burning.

Serve immediately and enjoy while hot.

Serving and Enjoying

To enjoy the dish, the crabs can be eaten as they are or wrapped in a few lolot leaves to make small bites.

They can also be served with different dipping sauces, such as chilli sauce, soy sauce or a fermented soybean sauce, depending on your preference.

Each accompaniment brings a different flavour and offers another way to enjoy the dish.

Enjoy your meal!
