CHẢ CUỐN LÁ BƯỞI | Grilled pork wrapped in pomelo leaves

Chả cuốn lá bưởi is a traditional speciality of the Mường people. Simple to prepare, this dish reflects a cuisine closely connected to nature, using local ingredients and aromatic leaves that are commonly found in home gardens.

The main ingredient is usually locally raised pork, valued for its firm and relatively lean meat. A slightly marbled cut, combining lean meat and fat, is preferred to achieve a tender and flavourful texture after cooking.

Depending on family traditions, the meat can be prepared in two ways: either finely minced or cut into thin strips before being seasoned. It is then wrapped in pomelo leaves, which give the meat a distinctive aroma during cooking.

Ingredients – Serves 3

  • 300 g pork
  • 20 g pomelo leaves
  • 2 shallots
  • Seasoning to taste: nuoc mam, salt and ground pepper

Preparing the Ingredients

Soak the pork in lightly salted water for 15 to 20 minutes, then rinse it, drain thoroughly and finely mince it.

Soak the pomelo leaves in lightly salted water for about 5 minutes, then rinse them several times in clean water and leave them to drain.

Peel the shallots and finely chop them.

Preparing the Pork Rolls

Place the minced pork in a bowl. Add 1 teaspoon of salt, a little ground pepper and 1 teaspoon of nuoc mam, then add the chopped shallots. Mix thoroughly to distribute the seasoning evenly.

Place a small amount of filling on each pomelo leaf, spread it out slightly, then roll the leaf tightly around the meat.

Grilling the Pork Rolls

Prepare a barbecue with hot embers, then place the rolls on the grill.

Grill them, turning regularly, until the meat is fully cooked and the pomelo leaves become soft and lightly charred.

Remove from the heat, arrange on a plate and serve hot.

Serving and Enjoying

The pork rolls wrapped in pomelo leaves release a delicate and distinctive aroma as they cook. The meat remains tender and flavourful, while the lightly grilled leaves add a unique aromatic note and a pleasant texture.

Simple, rustic and full of character, this dish perfectly reflects the richness of traditional Mường cuisine.

Enjoy your meal!
