Preparing the Clams

Soak the clams in salted water for about 2 hours to help them release any sand.

Tip: You can add a few thin slices of chilli to the soaking water to help the clams expel the sand more effectively.

After soaking, place the clams in a colander or basket, then rinse them several times in a large bowl of clean water, gently stirring them as you do so.

Repeat the process 1 to 2 times, until the water remains clear and the clams are completely free of sand.

Preparing the Other Ingredients

Peel the pineapple, remove the eyes and the tough core, then cut the flesh into pieces about 1 cm thick.

Peel the garlic and lightly crush it.

Wash the spring onion, then cut it into short pieces.

Stir-Frying the Pineapple and Clams

Heat 4 tablespoons of vegetable oil in a large frying pan. Add the crushed garlic and sauté until lightly golden and fragrant.

Add the pineapple and stir-fry for about 3 minutes.

Add the clams, then stir in 2 tablespoons of sugar. Stir-fry over high heat, stirring regularly, until the clams have opened and are cooked through.

Finally, add the spring onion, toss briefly, then remove from the heat.

Serving and Enjoying

Arrange the stir-fried clams with pineapple on a serving plate and serve hot.

The lightly fruity aroma of the pineapple pairs beautifully with the garlic and spring onion, while the clams add a delicate briny flavour.

This dish can be enjoyed with steamed white rice or served as part of a shared meal with several other dishes.
